Scrambled eggs with fresh truffles

Exclusive breakfast which you can prepare really fast. Fresh truffles can be difficult to buy, but season for them is from September to January so it can be made.
Only one ounce is enough for scrambled eggs to gain exceptional taste and aroma.
If you add a slice of fresh bread and get fresh made coffee - that's the breakfast we can dream of.

  1. In a bowl put eggs and salt
  2. Grate peel of truffle to the bowl
  3. Rest of the mushroom cut to very thin slices with sharp knife or with vegetable peeler
  4. Lightly whisk the eggs with fork until all the ingredients are just combined and the mixture has one consistency.
  5. Heat a small non-stick frying pan for a minute then add the butter and let it melt. Don’t allow the butter to brown
  6. Pour the egg mixture and stir with a wooden spoon until it will be softly set and still runny in places
  7. Put scrambled eggs on plate and decorate it with truffle slices
  8. Chop chives very fine and put it on scrambled eggs
  9. Cut tomato into quarters and put it aside on the plate
  10. Best served while still hot with fresh bread and butter
